If you find yourself driving past Aqua Quip’s Redmond location on a weekend, you are very likely to see the familiar sight of smoke billowing out from one of the grills or smokers in front of the store. Next to it, you will see David, our resident “BBQ Master”. Be sure to roll your windows down and take in the smells of whatever delicacy he has come up with on that given day.

David has spent over 20 years in the pool, spa, hearth, and BBQ industry, much of that time running his own store. It is estimated that David has sold well over 2,000 spas in the Seattle market alone!  But David’s newest passion is the BBQ. David owns 4 BBQ’s and 1 smoker and he cooks on them frequently. When asked how he got such a passion for BBQ, David responded, “I got hungry.”

David has family in Kansas and visits that area frequently. He has been influence by Mid-west style BBQ and adds a touch of that flavor to his recipes. He even brings his own meats to other BBQ stores to show them the benefits of cooking demonstrations! Try some of David’s recipes and let us know what you think! Happy grilling!

Featured Recipes:

Cherry Burger with a Twist

1.) Take 1½ lbs of ground beef (15% fat).
2.) Mix in 5 Tbsp Wild Cherry Chipotle Rub.
3.) Mix in 1 1/2 tsp fresh chopped ginger.
4.) Add 1 tsp freshly zested orange rind.
5.) Add 1 tsp freshly ground black pepper.
6.) Mix everything very well and let it sit to allow all the flavors to penetrate the meat.
7.) Turn the Traeger Smoker up to high and grill them hot and fast...



Tennessee Whiskey Chicken Apple Bacon Links

1.) Take some Chicken Apple Link Sausages and quarter them.
2.) Lightly coat them with the Tennessee Whiskey BBQ sauce
3.) Roll them in bacon. Trick: first roll and stretch the bacon length-wise, give them about a wrap and a half, and then rotate and wrap them around the center. Secure the bacon with two toothpicks.
4.) Lightly base the sausages with the BBQ sauce and put them on the grill. Smoke for about 4 hours.



Smoky Apple Pork Tenderloin

1.) Take a pork tenderloin, lay it out on a cutting board and butterfly it (cut it down the long side so you could open it up like a book).
2.) Pour a generous amount of Smoky Apple BBQ sauce into the cavity.
3.) Slice some chicken apple sausage into ¼"-wide wheels and lay these on top of the BBQ sauce. Then cover the sausage with the sauce.
4.) Sew the tenderloin back together using turkey lacers and string.
5.) Baste the tenderloin with the Smoky Apple BBQ sauce as you smoke it for 3-4 hours. Finish off on high.



Butt Rub Burgers

1.) Take 1½ lbs of ground beef.
2.) Mix in 4½ Tbsp. of Butt Rub.
3.) Mix in 1 freshly crushed clove of garlic.
4.) Add 1 Tbsp. of Dijon mustard.
5.) Mix everything very well and let it sit to allow all the flavors to penetrate the meat.
6.) Smoke the burgers for about 1½ hours and cook them off on high.



Wild Cherry Chipotle Chicken

1.) Take some chicken thighs and rinse them thoroughly under cold running water. Proceed to pat them dry with a paper towel.
2.) Pull the skin back and give them a liberal dusting of John Henry’s Wild Cherry Chipotle rub. Replace the skin and dust the rest of the chicken.
3.) Spray them with a light coat of olive oil just before putting them on the grill, and smoke for several hours.
